Ingredients:

  • 2 cups white rice
  • Diced shiitake mushroom
  • Green peas, edamame, chickpeas (or other kinds of beans)
  • Cut corn
  • Diced carrots
  • Diced veggy ham

Seasonings and Condiments:

  • Salt
  • Pepper

Method:

  1. Use just enough veggy ham, mushrooms and beans to accompany and flavor the rice.
  2. Heat large sauté pan or wok with a moderate amount of oil. First add mushrooms and sauté until fragrant. Add other vegetables and veggy ham. Continue to sauté until fragrant. Season with salt and pepper.
  3. Add white rice. Mix well and stir fry until fragrant. Adjust seasoning.

Note: You can also add a little ketchup, curry powder or other diced vegetables to get your desired flavor.
