Crispy Fried Mushrooms
 

Ingredients:

  • 1 1/3 lbs button mushrooms
  • 2:1 ratio cornstarch and potato starch
  • Oil for deep frying
  • 1 tablespoon margarine

Seasonings and Condiments:

  • ½ teaspoon black pepper
  • Salt
  • Sugar

Method:

  1. Wash mushrooms and blanch. Drain well.
  2. Mix enough cornstarch, potato starch and water into paste to coat all the mushrooms.
  3. Deep fry mushrooms in hot oil until crispy (about 1 to 2 minutes). Drain on paper towel.
  4. Melt margarine in a pan, and season it well with salt, pepper, and sugar.
  5. Toss with mushrooms to coat. Serve immediately.
