| Crispy Fried Mushrooms |

Ingredients:
- 1 1/3 lbs button mushrooms
- 2:1 ratio cornstarch and potato starch
- Oil for deep frying
- 1 tablespoon margarine
Seasonings and Condiments:
- ½ teaspoon black pepper
- Salt
- Sugar
Method:
- Wash mushrooms and blanch. Drain well.
- Mix enough cornstarch, potato starch and water into paste to coat all the mushrooms.
- Deep fry mushrooms in hot oil until crispy (about 1 to 2 minutes). Drain on paper towel.
- Melt margarine in a pan, and season it well with salt, pepper, and sugar.
- Toss with mushrooms to coat. Serve immediately.
